Zymology 21

Zymology 21, the newest restaurant and bar concept to hit downtown San Diego, is the third concept from the C21 Restaurant Group, known for the award-winning Café 21 restaurants in University Heights and the Gaslamp Quarter. Serving brunch, dinner and late night cocktails daily, the menu features specialty food items and inventive farm-to-bar cocktails from chef Leyla Javadov's "laboratory” that are formulated using house fermentation, puree and infusion techniques.

Zymology 21 is elevating what has become the typical Gaslamp nightlife experience by taking guests on a taste experiment that ignites all of the senses. One that mixes the old processes of "zymology,” a scientific field that studies fermentation, with modern cocktail preparations that include molecular mixology.

Zymology 21 is a lounge & eatery serving brunch, dinner & late night cocktails. Our "lab" features molecular mixology from Chef Leyla of Cafe 21 fame.
